Asparagus Manchego Bisque

Recipe makes 4 Servings

1/4 cup(s) shallot, very finely chopped
5 stalks asparagus, sliced very thinly
1/2 cup(s) vegetable stock
1/2 Tsp dry thyme
16 2/5 fl oz Ferrer Green Asparagus Soup
1/4 cup(s) heavy cream
1/4 cup(s) manchego cheese, finely grated
1/2 Tsp black pepper

Heat a medium sized sauce pan over medium high heat. Add shallots, asparagus, stock and thyme to pan.
Bring to a simmer and cook until shallots and asparagus are tender/firm and stock is reduced by half.
Reduce heat to medium. Add Ferrer soup, cream and cheese to pan. Stir and simmer gently, just to heat through, about 3 minutes. Top with freshly ground black pepper & serve.
