Arroz Con Pollo (Chicken with Rice)

Recipe makes 6 Servings

2 Tbsp canola oil
1 cup(s) brown rice
1/2 cup(s) white onions, chopped
3 garlic, minced
1 Lb chicken breast tenders, chopped
1 cup(s) tomato, chopped
1 Tsp ground cumin
1 Tsp ground oregano
1/8 Tsp salt
1/8 Tsp black pepper
3 cup(s) H-E-B Select Ingredients Reduced Sodium Chicken Broth

Heat oil in a heavy bottom skillet on medium-high heat.
Stir in rice, onion and garlic. Cook 4 minutes.
Place chicken on top of rice.
Add chopped tomato, cumin, oregano, salt, pepper and chicken broth. Bring to a boil.
Cover, reduce heat and cook 20 minutes or until rice and chicken are cooked through. You can also place this in a 350F oven for 20min with a lid on to finish cooking more evenly. (As long as the pan you are using is oven safe).
