Recipe makes 12 Servings

17 Oz frozen puff pastry sheets
12 Oz H-E-B Fully Cooked taco flavored beef crumbles
1 Tsp ground cumin
1/4 cup(s) raisins
1/4 cup(s) pimento stuffed olives, chopped
1 extra large egg, hard boiled and chopped
8 Oz tomato sauce
1/8 Tsp salt

Instructions

Heat oven to 350°F.

Spray two baking sheets with non-stick cooking spray and set aside.

Thaw pastry sheets per package instructions.

Combine beef crumbles, cumin, raisins, chopped olives, chopped eggs, and tomato sauce in a microwave safe bowl.

Cover bowl with plastic wrap and microwave on High power for 4 minutes, stirring once during cooking time. Set mixture aside.

Cut each pastry sheet into 6 squares, and roll squares with a rolling pin so that they are 6-inch squares.

Place 1/3 cup of empanada mixture in the center of each pastry square, and slightly wet the edges of the pastry with water.

Fold the pastry over in a triangle, roll the edge over tightly to make a good seal.

Pierce edges of empanadas with a fork and place on the prepared baking sheet.

Bake the empanadas on the center oven rack for 20 to 30 minutes.
