1 Tbsp olive oil
1/2 cup(s) red onion, cut into thin slivers
1/2 cup(s) red bell pepper, cut into thin slivers
1/4 cup(s) dried apricots, chopped
1 Tsp turmeric
1/2 Tsp black pepper, freshly ground
1 cup(s) baby spinach, chopped and pressed gently into cup for measuring

Heat a large skillet over medium high heat.
Add oil, onion and bell pepper, then sauté for 10 minutes, or until onions and peppers are tender.
Add apricots, turmeric, black pepper, spinach and cauli rice. Stir well for 1 to 2 minutes and remove from heat.
Adjust seasoning with salt and more pepper if desired.
