Recipe makes 12 Servings

8 Oz cream cheese, softened
1 1/2 Tsp vanilla extract, divided use
1/2 cup(s) walnuts, chopped
1 H-E-B French Baguette
4 large eggs
1 cup(s) heavy whipping cream
1/2 Tsp ground nutmeg
1 1/2 cup(s) Hill Country Fare Apricot Preserves
1/2 cup(s) orange juice

Beat cream cheese and 1 teaspoon vanilla until fluffy.
Stir in nuts, set aside.
Cut bread into 10 to 12, 1 1/2 inch slices. Cut a pocket in the top of each.
Fill each with 1 1/2 teaspoons of cheese mixture.
Beat eggs, whipping cream, 1/2 teaspoon vanilla and nutmeg.
Dip filled bread slices in egg mixture using tongs, being careful not to squeeze out the filling.
Cook on a lightly oiled, preheated griddle until both sides are golden brown.
Keep warm until serving time.
Heat preserves and juice.
Drizzle apricot mixture over toast to serve.
