2 eggs
1 1/2 cup(s) milk
1 Tsp cinnamon
4 Tbsp butter
2 Gala apple, peeled, cored & cut crosswise 1/8 inch thick
1/2 cup(s) H-E-B Organics Grade A Medium Amber Maple Syrup

Beat baking mix, eggs, milk and cinnamon with a hand mixer until smooth.

Heat a large pan or griddle on medium. Lightly grease with butter.

Using a toothpick, dip apple slices into batter. Cook on hot griddle until golden brown, turning once. Serve with maple syrup.
