Apple Crepes with Cinnamon Whipped Cream

4 green apples, sliced
2 Tbsp unsalted butter
2 Tbsp brown sugar, divided use
1/8 Tsp ground nutmeg
1 cup(s) heavy cream
1 Tsp cinnamon, divided use
1 Lb plain crepes
1 Pt blackberries

In a medium sauté pan over medium heat, add apples, butter and 1 tablespoon brown sugar. When apples are hot, stir in nutmeg and cook 10 minutes. Remove from heat and cool.

While apples cool, pour heavy cream in a large bowl. Add remaining sugar and cinnamon. Mix on high until whipped cream has stiff peaks.

Place cooled apple mixture on crepes and gently roll up. Once rolled, spoon any leftover liquid over crepes and top with cinnamon whipped cream and blackberries.
