Apple Compote with Pretzel Almond Streusel

4 Tbsp coconut oil
6 Fuji apples, peeled cored and chopped small
1 Tbsp lemon, juiced
1 Tsp lemon, zested
1/2 cup(s) brown sugar, divided use
1/4 cup(s) maple syrup
1 Tsp cinnamon
1/2 Tsp All Spice
1 box (4.5 oz) H-E-B Pretzel Crackers - Sea Salt
1 cup(s) almond flour
1/2 cup(s) pecans, crushed
1 Spiced Islands Vanilla Bean

Preheat oven to 375°F.
In a large skillet heat half of coconut oil. Add in apples, lemon juice, and lemon zest, half of brown sugar, maple syrup, and spices. Cook until tender and sauce is thickened. (about 15-20 minutes.) Fill individual ramekins or a baking dish with cooked apple mixture.
In a food processor, combine other half of the coconut oil, pretzels, almond flour, pecans, and scraped vanilla beans, pulse until smooth. Top the apple compote with the pretzel topping. Bake for 30 minutes until topping has browned and is crisp.
