2 Tbsp extra virgin olive oil
1 cup(s) celery, diced
1 cup(s) baking potato, cubed small
1 cup(s) red onions, diced
12 Oz pico de gallo
1 Tbsp ground cumin
1 1/2 Tbsp oregano
6 cup(s) vegetable stock
1 cup(s) fresh cilantro, chopped
1 Tsp kosher salt
16 Oz H-E-B Italian Style Pork Meatballs
2 medium lime, juiced

Instructions

Place a large pot or Dutch oven over medium heat and add olive oil. Sauté celery, potatoes and onions until onions are translucent.

Add pico de gallo, cumin, and oregano, and cook 3 - 5 minutes.

Add veggie stock, cilantro, salt, meatballs and lime juice. Bring to a simmer and cook 25 - 35 minutes or until meatballs are fully cooked.

Serve with more fresh lime juice and season to taste with salt and pepper if needed.
