Ingredients

Recipe makes 10 Servings

1 Tbsp extra virgin olive oil
2 poblano peppers, seeded and sliced thinly
1 medium onion, sliced thinly
1/2 Tsp kosher salt
2 Lb Dos Mamacitas Chorizo
1/2 cup(s) Red Rio Adobo Sauce
2 cup(s) Colby Jack cheese, shredded
28 Oz bag of frozen tater tots

Instructions

Place olive oil in a non-stick pan over medium heat. Add peppers and onions with a pinch of salt and stir-fry until just starting to brown, about 6 to 8 minutes. Allow to cool.

Preheat oven to 375ºF.

In a large bowl combine chorizo with adobo sauce and the cooled peppers and onions. Mix well and press evenly into a 9x13 inch casserole dish.

Evenly sprinkle with cheese then top with tater tots (they should almost be overflowing from the pan).

Bake uncovered 35 to 45 minutes or until internal temperature is 175ºF and tots are crispy. Cool 15 minutes before serving.

Optional garnish: sprinkle with green onions or chopped cilantro.
