Ingredients

Recipe makes 10 Servings

1 cup(s) almond flour
1 cup(s) white corn meal
1 Tbsp baking powder
1/2 Tsp salt
1 Tsp Central Market Organics Adobo Seasoning
4 Oz salted butter, melted
1 large egg
1/2 cup(s) half & half
3 Oz sharp white cheddar, very finely shredded

Instructions

In a large bowl, combine almond flour, corn meal, baking powder, salt and adobo seasoning. Whisk together.

Add butter, egg, half & half and cheese. Mix together thoroughly.

Spoon into cups of a non-stick madeleine pan. Spread out into a single layer, pushing gently into cups.

Bake 7 to 10 minutes, or until lightly browned on top.

Chef's Note: This recipe also makes 1 large loaf or 12 muffins. Increase cooking time to 15 to 20 minutes or until muffins are brown on top and thoroughly cooked.
