
Sheet Pan Crispy Adobo Chicken and Roasted Corn

Serves 4
Ingredients
- 5 Large eggs, beaten
- 2 1/2 cups Plain panko bread crumbs, plus more as needed
- 1 tbsp Adams 5 Pepper 5 Salt Seasoning, plus more as needed and for seasoning corn
- 1 3/4 lb Adobo seasoned thin sliced chicken breasts, approximately 4 breasts
- 1 tbsp Vegetable oil, as needed for brushing over corn
- 4 Ears of fresh corn
Instructions
- Preheat oven to 400°F. Line a sheet pan with foil or parchment paper. Set aside.
- Add eggs and panko to 2 separate shallow dishes. Add seasoning to panko and stir to incorporate.
- Dredge each chicken breast in egg to just coat then place in panko, pressing chicken firmly to coat well. Place on prepared pan.
- Brush corn lightly with oil, sprinkle all sides with seasoning and place around chicken on sheet pan.
- Bake 20 to 25 minutes or until chicken is fully cooked and corn is nicely softened. Allow to cool before serving.
- Garnish with green onions and a squeeze of lime juice if desired.
