Ingredients

  • 4 qt Water, 1 gallon
  • 1 cup Kosher salt, iodized salt
  • 1/2 cup Honey
  • 2 tbsp Original flavor Tabasco, or similar hot sauce preferred
  • 1 Medium white onion(s), sliced
  • 3 Bay leaves
  • 2 tbsp Whole black peppercorns
  • 4 cups Ice, as needed to cool brine

Instructions

  1. In a medium size pot add water, salt, honey, hot sauce, onions, bay leaves, and peppercorns. Bring everything to a simmer.
  2. Once liquid is at a simmer, cook just long enough to dissolve all salt. Remove from heat add ice and allow to cool completely.
  3. Store brine in fridge until ready to use. When brining chicken, allow at least 8 hours in this brine for best results.
  4. Chef's Note: Though this brine is meant for domestic chickens from 2 to 6 pounds, it will also work great on any wild fowl.
