Juicy, Flavorful Chicken? Right This Way
We’ve all done it: Kept our bird on the grill just a minute too long or cooked it at the wrong temperature, and somehow ended up with dry chicken. Four tips to delicious, juicy chicken:

  1. Even Things Out
Chicken thickness varies, so make sure to flatten out your piece before you pop it on the grill or in the oven to ensure that it cooks evenly. Place it between two sheets of plastic wrap and use a rolling pin or glass to gently flatten your chicken to even thickness.

  2. Give It Some Space
When cooking chicken in the oven, take care to not overcrowd it in the pan. This way, each piece has space to properly heat on all sides for even cooking.

  3. Brine Your Chicken
Soaking your chicken in a simple brine, even if it's just for 15-30 minutes, will help keep your chicken juicy and retain a bit of added flavor. It really makes a big difference! Mix 4 Tbsp. kosher or sea salt per 4 cups of water (use 2 Tbsp. table salt per 4 cups of water). You can also drop in sliced garlic, whole peppercorn, bay leaves, or any additional herbs for added flavor.

  4. Make the Cut
If you’re cutting chicken, slice against the grain for the best results.
