Preparation Instructions

Smoky Paprika Chipotle Swordfish: Prep: 5 min. Cook: 10 min. Serves: 4. Ingredients: 1 packet Victoria Taylor's Smoky Paprika Chipotle Swordfish Seasoning; 3/4 cup mayonnaise; 1-1/2 pounds swordfish, divided into 4 servings. 1. Heat gas or charcoal grill to medium-high, or pre-heat broiler to low. 2. In a small bowl combine the Smoky Paprika Chipotle Swordfish Seasoning with mayonnaise. 3. For Broiling: Place the rack 4-6 inches from the heat source. Using half the mixture, coat one side of the swordfish steaks. Place the steaks coated side up in a pan and cook for 5-6 minutes. Flip the steaks, coat with remaining mixture, and cook for 5 more minutes, or until just cooked through. 4. For Grilling: Using half the mixture, coat one side of the swordfish steaks. Place the steaks coated side down on the grill. Use the remaining mixture to coat the other side of the swordfish steaks. Grill for 5-6 minutes. Flip steaks and grill for 5 more minutes, or until just cooked through.
