Deep burgundy in color and full-bodied, this impressive Cabernet Sauvignon presents bramble fruit on the nose with hints of sage, smoke and raspberry. Soft, well-integrated tannins and a velvety texture combine with a dense palate of forest floor, tobacco with a lingering finish of a dark raspberry. Grapes were hand sorted and gently crushed. Native yeast was used for fermentation and the wine underwent malolactic fermentation in the barrel. After primary fermentation the wine went through an extended maceration period to soften the tannins. After 22 months aging the wine was bottled unfined and unfiltered.
