A white, semi hard cheese from Mexico, similar to unaged Monterey Jack, but with a mozzarella-like string cheese texture. It is a good melting cheese that retains its shape becoming soft and stringy when baked, roasted or grilled. Oaxaca can be served on sandwiches or as a topping for pizzas and nachos.
