USDA organic. No high fructose corn syrup. No trans fat. Spelt is considered the Mother Grain of the five ancient grains of Israel. Spelt contains higher levels of protein and fiber than wheat and the gluten in spelt can often be easier to digest by those sensitive to wheat. Spelt, the most used grain in the US until 1910, has a delicious, sweet, nutty taste that is regaining popularity on America's tables today. The Legacy of the Artisan Baker: Hundreds of years ago most families baked their own brads. Rustic loaves were mixed, kneaded, shaped and left to rise in family kitchens before being carted to communal ovens watched by a village elder who would carefully guard the loaves as he tended the fire. Eventually this role developed into the trade of village baker, having gathered the skills, techniques, recipes and methods from the local home bakers and their centuries of baking experience. At Rudi's Organic Bakery, we hold to the traditions of this village baker, following the natural process - as in making great wine or cheese - preserving the art of breadmaking for this generation and generations to come. Our bread is allowed to rise slowly to let each individual loaf develop its own wonderful flavor texture and fullness.
