The ancient Aztecs called it achiotl, and it was used for Mexican manuscript painting in the sixteenth century. It could be used to season chicken, fish and pork. It is used frequently in the coloring of cheeses like Cheddar. Achiote is plant used as a condiment, it doesn't have flavor, it only colors red.
