Chorizo is the Spanish word for a dry cured sausage with red paprika. Our Español chorizo is a mixture of coarsely ground pork meat—with larger chunks of meat than its North American counterparts—blended to a mixture of spices, including paprika which lends it a red coloring. The ingredients are then stuffed in a collagen casing. After a minimum of three moths of curing, the product is ready to be tasted.
