Nocellara is an Italian variety of olives originally from Sicily. It has a flavor and aroma of intense green notes such as fresh cut herbs and grass. Tones of tomatoes and figs with a balanced medium-high peppery finish with light bitterness. Ideal for sautéing seafood such as shrimp, scallops and squid or finishing color vegetables.
Groves are nestled in the foothills of the Andes in Central Chile's Maipo Valley. Olives are hand-picked at optimal ripeness to capture the fresh, herbal aroma and delicate, fruity flavor.
