8-10 lb apples (Suggested Apples: Choose apples that are naturally sweet, like Red Delicious, Gala, Fuji, Winesap, McIntosh, Yellow Delicious, Mutsu, Pink Lady, Honeycrisp. Always use a variety when canning apples); sugar (see recipes for amount); water (see recipes for amount); 1 pouch Mrs. Wages Spiced Apple Mix. Prepare home canning jars and lids according to manufacturer's instructions for sterilized jars. Keep jars hot before filling. Applesauce (Makes 3 Quarts): Wash, core, and peel 8-10 lb apples. Cut into halves or quarters. Combine prepared apples with 2 cups water and bring to a boil (212 degrees F). Cover pot; reduce heat and simmer (200 degrees F) for 30 minutes. Puree apple mixture and measure number of cups before returning to pot. Add 1/4 cup sugar per 1 cup puree. Stir to dissolve sugar. Stir in contents of Mrs. Wages Spiced Apple Mix. Heat mixture just to a boil (212 degrees F). Remove from heat. To Process (Processing time listed is for altitudes less than 1000 feet. At altitudes of 1000 feet or more increase processing time 1 minute for each 1000 feet of altitude), carefully ladle hot apple mixture into hot jars. Pack tightly leaving 1/2 inch headspace.
