Prep Time: 10 minutes. Cook Time: 15 minutes. Makes 4 servings. You Will Need: 1 pkg McCormick Seasoning Mix; 1 lb thinly sliced boneless skinless chicken breast halves; 1 tbsp oil; 1/2 cup spaghetti or marinara sauce; 1/2 cup shredded mozzarella cheese. 1. Empty seasoning mix into shallow dish. Brush chicken with oil. Coat evenly on both sides with seasoning mix. Discard any remaining seasoning mix. 2. Place chicken in single layer on foil-lined shallow baking pan sprayed with no stick cooking spray. 3. Bake in preheated 400 degrees F oven 10 minutes or until chicken is cooked through. Turn chicken over. Spoon sauce over chicken. Sprinkle with cheese. Bake 5 minutes longer or until cheese is melted. Skillet Directions: Coat chicken as directed. Heat oil in large nonstick skillet on Medium heat. Add chicken in batches, adding more oil if necessary; cook 5 minutes per side or until cooked through. Spoon sauce over chicken. Sprinkle with cheese. Cover. Cook 1 to 2 minutes longer or until cheese is melted. Try this twist! Chicken Rollatini: Mix 1/2 cup each chopped tomatoes and shredded mozzarella cheese and 1/2 tsp McCormick basil leaves. Divide tomato mixture evenly in center of each piece of chicken. Roll up chicken; brush with oil. Coat with seasoning mix. Place chicken rolls, seam-side down, in foil-lined shallow baking pan. Bake in preheated 375 degrees F oven 30 minutes or until chicken is cooked through. Serve with warmed spaghetti sauce. Makes 4 servings.
