  • 1. Cut thawed fish fillets into 3/4-inch thick strips. Chill in ice water for 5 minutes. Shake off excess water. 2. Place Hill Country Fare original seasoned fish fry in a small bowl or plastic bag. Roll fish in fish fry until well coated. For a heavier coating, dip in water and roll in fish fry again. 3. Using an electric fryer or skillet, heat oil to 375 degrees F. (Use medium heat for stovetop skillet.) Fry 5 to 6 pieces for 3 to 4 minutes until golden brown. One package coats approximately 3 to 4 pounds of fish.
