Preparation Instructions

Refrigerate unused portion in a separate container. MINI CHERRY CHEESECAKES Ingredients: 1 can Hill Country Fare TM Cherry Pie Filling and Topping 8 oz cream cheese, room temperature 1 cup powdered sugar ½ cup whipped topping 12 mini graham cracker pie shells 1 tablespoon cornstarch 1-2 tablespoons sea salt (optional) 1. Bake mini pie shells at 350 °F for 5 minutes. Let cool. 2. Puree cherry pie filling in a food processor for 5-10 seconds. Set aside 2/3 cup pureed filling. Add cornstarch to remaining cherry puree, blend 5 seconds, and set aside. 3. In a large bowl, combine cream cheese, powdered sugar and whipped topping. Once incorporated, add in the reserved 2/3 cup pureed cherry pie filling and mix until combined. 4. Spoon 2 tablespoons of cherry cheesecake mixture into pie shells and top with 1 tablespoon of cornstarch thickened cherry puree. 5. Chill in fridge 2 hours or until set. If desired, garnish with additional whipped topping and a sprinkle of sea salt before serving. SIMPLE CHERRY PIE Bring refrigerated pie crusts to room temperature per package instructions. Place bottom crust into a 9-inch pie tin and press gently into sides. Prick bottom and sides with a fork for ventilation. Fill with 1 to 2 cans of pie filling. Place top crust and crimp as desired. Cut slits for ventilation. Cover edges with foil to prevent burning. Bake at 425 °F for 35-45 min or until crust is golden brown.
