With just a few minutes and a few added ingredients, Hill Country Fare Bakery Style Blueberry Muffin Mix turns into delicous golden brown muffins for the whole family. The can of blueberries make them even better!

Preparation Instructions

YOU WILL NEED: 1 EGG, 3/4 CUP WATER PREHEAT oven to 400ºF. Grease muffin pan (or use paper baking cups). DRAIN blueberries; rinse thoroughly with cold water, and set aside. POUR large muffin pouch into bowl. Break up any lumps with a fork. ADD 1 egg and 3/4 cup of water to mix. STIR until moistened (about 50 strokes; batter will be slightly lumpy). Do not use an electric mixer. Gently FOLD in drained and rinsed blueberries. FILL muffin cups evenly (about 2/3 full for 12 regular muffins or no more than 1/4 inch from the top for 6 jumbo muffins). Generously SPRINKLE streusel topping (small packet) over muffins BEFORE baking. BAKE at 400º F for: Jumbo: 6 muffins: 23-27 minutes* Regular: 12 muffins: 18-22 minutes* COOL 5-10 minutes. Gently loosen muffins, remove from pan and serve warm. HELPFUL HINT: Make sure blueberries are thoroughly rinsed and drained. Repeat rinsing and draining procedure several times, making sure no blueberry juice get into the muffin batter. Adding liquid from blueberry can will result in blue or blue-green muffins. *Due to variations in equipment, cooking time and/or temperature may require adjustment. BLUEBERRY CRUMBLE NUT BREAD You Will Need: 1 box Hill Country Fare Bakery Style Blueberry Muffin Mix 1 Egg 3/4 cup Water 1/2 cup Pecan Pieces 1. Heat oven to 350°F. Spray an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan with non-stick cooking spray; set aside. 2. Drain blueberries; rinse in a strainer; set aside. 3. Combine EGG and WATER in a mixing bowl; stir gently with a fork to blend. Add Hill Country Fare Bakery Style Blueberry Muffin Mix and stir quickly to moisten (batter will be lumpy). Gently stir in BLUEBERRIES and PECAN PIECES. 4. Pour into prepared loaf pan and sprinkle with streusel topping. Bake on center oven rack for 55 minutes or until a wooden pick inserted in center comes out clean. Cool before removing from pan and slicing. Makes: 8 servings
