Preparation Instructions

Preparation: To Make 12-13 Pancakes: 2 cups baking mix, 1-1/3 cups milk, 1 egg, 2 tbsp sugar. To Make 20 Thinner Pancakes: 2 cups baking mix, 1-3/4 cups milk, 2 eggs, 2 tbsp sugar. To Make 12 - 14 Inch Waffles: 2 cups baking mix, 1-1/3 cups milk, 1 egg, 2 tbsp oil. Pancakes: Prep Time: 5 minutes. Cook Time: 10 minutes. 1. Heat non-stick skillet to medium high heat or electric griddle to 375-400 degrees F. 2. Combine ingredients (see above) in a bowl and stir with a spoon until batter is moistened (do not over mix). Vary milk or mix for desired thickness. Thinner batter makes crepe-like pancakes. 3. Pour batter 1/4 cupfuls onto hot, lightly greased skillet or griddle. 4. Cook until edges are dry and top is covered with bubbles, about 1 minute on each side. Turn pancake only once. Makes: 12-14 pancakes. Waffles: Prep Time: 10 minutes. Cook Time: 20 minutes. 2 cups Hill Country Fare All-Purpose Baking Mix; 1-1/3 cups milk, regular, low-fat or fat-free; 1 egg or 1/4 cup egg Substitute; 2 tbsp oil; 3 tbsp sugar (optional). 1. Heat waffle iron according to manufacturer's directions. 2. Combine ingredients (see above) in a bowl. Stir with a fork until batter is moistened (do not over mix). Pour batter into center of a hot, greased waffle iron. 3. Cook until steam slows and waffle is golden brown. Remove carefully. Makes: 12 4-inch waffles. Rolled Biscuits: Prep Time: 5 minutes. Cook Time: 10 minutes. 2-1/4 cups Hill Country Fare All-Purpose Baking Mix; 2/3 cup 2% milk, (or water). 1. Heat oven to 450 degrees F. Set aside a lightly greased baking sheet. 2. Combine Baking Mix and milk or water in a bowl. Stir to blend to make a soft dough. Fold and pat on floured board about five times. Roll dough 1/2 inch thick. Cut with a 2-1/2 inch floured cutter. Place on lightly greased baking sheet. 3. Bake 8 to 11 minutes until golden brown. Makes: 8-9 biscuits.
