Preparation Instructions

NO ROLL SUGAR COOKIES WITH LEMON GLAZE PREP: 25 MINUTES 1 CUP H-E-B SUGAR 1 CUP BUTTER OR MARGARINE, SOFTENED 1 EGG 1 TSP. VANILLA 2 1/4 CUPS ALL PURPOSE FLOUR PREHEAT OVEN TO 350°F. 1. COMBINE SUGAR, BUTTER OR MARGARINE, EGG AND VANILLA IN A LARGE BOWL. BEAT WITH A WOODEN SPOON OR ELECTRIC MIXER FOR 1-2 MINUTES. STIR IN FLOUR WITH A WOODEN SPOON FOR 2-3 MINUTES OR UNTIL DOUGH IS SMOOTH. 2. SHAPE INTO TEASPOON-SIZE BALLS (MAKES ABOUT 36). PLACE ON UNGREASED COOKIE SHEETS ABOUT 2 INCHES APART. 3. PRESS THE COOKIE BALLS TO 1/2 INCH THICKNESS WITH THE BOTTOM OF A DRINKING GLASS OR JAR DIPPED IN SUGAR. 4. BAKE THE COOKIES FOR 10-14 MINUTES, UNTIL EDGES BEGIN TO BROWN AND CENTER IS FIRM. REMOVE FROM OVEN AND COOL ON WIRE RACK. TART LEMON GLAZE: 1 TBS. LEMON JUICE 3/4 CUP POWDERED SUGAR STIR TOGETHER LEMON JUICE AND SUGAR UNTIL SMOOTH. ADD A FEW ADDITIONAL DROPS OF LEMON JUICE, IF NEEDED. SPREAD OVER EACH COOKIE AND DECORATE AS DESIRED WITH COOKIE SPRINKLES WHILE STILL WET. MAKES: 3 DOZEN COOKIES
