Preparation Instructions

Cooking: 1. Arrange charcoal in half of grill and heat 30 min or heat one side of gas grill 10 min-lid closed. 2. Sear pork directly over heat 2 min/side then move to cool side 3. Cook 40-45 min in a closed grill. Keep air temp in chamber at 350-400 degrees. 4. Remove pork at 155 deg internal temperature. Let stand 10 min. Option: Sear & roast 400 deg oven.
