  • Oven:
    Preheat oven to 325°F. Season lamb. Place fat-side up in a shallow roasting pan. Cook uncovered in the center of the oven for 25 - 35 minutes per pound. Lamb is medium-rare when meat thermometer reads 135 - 140°F (inserted in center and not touching bone). Let stand for 15 minutes before carving.
