Keep refrigerated or frozen. Thaw in refrigerator or microwave. Keep raw meat separate from other foods. Wash working surfaces (including cutting boards), utensils and hands after touching raw meat. Cook thoroughly. Keep hot foods hot. Refrigerate leftovers immediately or discard.- Smoker or Pellet Grill: Preheat to 225°F. Place brisket on smoker and cook for 8 – 12 hours. It's important to maintain a consistent temperature in the smoker throughout the cooking process. Remove brisket when fork tender (195°F – 205°F). Let rest for 10 minutes before cutting/serving. Other Option: Sear and braise brisket at 350°F for 2.5 – 3.5 hours.
