Keep Refrigerated.- 1. Cut skirts into 10-inch sections. 2. Optional: Tenderize with a Jaccard seasoning. 3. Marinate 6-24 hours in an acidic marinade in the refrigerator. 4. Grill over Medium-Hot heat (425 degrees surface temp is ideal). 5. Cook on an open grill 5-8 min. per side depending on thickness. Slice thinly across the grain with a knife at a 45 degrees angle.
