1. Cut skirts into 10-inch sections. 2. Optional: Tenderize w/a Jaccard. 3. Marinate 6-24 hours in an acidic marinade in the refrigerator. 4. Grill over Medium-Hot heat (425 degree surface temp is ideal). 5. Cook on an open grill 5-8 min. per side depending on thickness. Slice thinly across grain with knife held at a 45 degree angle. Options: Broil, pan fry, pan broil.
