Keep refrigerated.- Slow-Roasting Instructions:
Preheat oven to 375°F. Place roast on a rack in a shallow pan with lean side down. Bake uncovered in the center of the oven for 60 - 70 minutes, depending on size. Remove when meat thermometer inserted in the center (not touching the bone or fat) reads internal temperature of 145°F. Let roast rest for 5 minutes before carving. Also great grilled.
