1. Heat 2-tbsp oil in stock pot over Medium. Brown shanks 3 min/side. 2. Cover with cold water. Slowly bring to a simmer. Skim gray foam from top until broth is clear. 3. Add seasonings. Simmer, covered, over Low heat 3 to 3-1/2 hours or until meat is tender. 4. Add chopped vegetables of choice, during last hour if making soup. Option: braise.
