Keep Refrigerated- Heat charcoal for 40 mins until ash covered or gas grill for 10 minutes with lid closed. Season or marinate as desired. Grill 4" above medium-high heat. Hold palm just above grate. If heat causes you to pull away in 5 seconds, heat is ideal (325 degrees). Cook for 10-12 or 13-17 min/side for medium-rare or medium. Remove when 140 or 150 degrees F internal temp is reached.
