We still mill our own flour, just as we did over 125 years ago, blending the best premium hard and soft wheats from the heartland. Which makes for the Gold Medal difference and consistency that home bakers have counted on for generations. There are 3 and one third cups of flour per pound.

Your Kitchen Rules: When to Use it: Sometimes you need a quick fix that never fails: Last-minute biscuits that are still crisp on top and soft in the middle; just-on-time bread bubbled with airy pockets awaiting melted butter and sweet jam. For any time you need to save every extra minute for the finishing touch, our self rising flour has the perfect proportions of salt and leavening agents to mix in the magic. Store it: Thousands of years ago, flour was store in cool, dry caves, but any airtight container or tightly-sealable freezer bag in your kitchen (or fridge or freezer for long-term storage) will do just fine. Just bring to room temperature before using. Measure it: Spoon flour into a dry measuring cup and level off with a knife. No sifting necessary. Substitute it: Limit the amount of ingredients needed on hand with self rising flour. Use it in place of your 1 cup all purpose flour, 1-1/2 teaspoons baking powder and 1/2 teaspoon of salt mixture. Cups per Pound: There are 3-1/3 cups of flour per pound and about 17 cups per 5 pound bag. To bake is to wait. Do not eat raw dough or batter.
