Gluten/Wheat free. About the Gluten-Free Pantry: When my son and I were diagnosed with Celiac Disease, the inability to digest gluten, our food choices became very limited. As a professional chef, I was making wonderful pastries, pizzas and breads for others, but couldn't eat any of them myself. I began experimenting - making the same recipes but substituting gluten-free ingredients. The results were delicious. No one guessed they were made without gluten. I wondered if others might enjoy some of my treats, so I turned my favorite recipes into gourmet baking mixes. Today I am pleased to share Gluten-Free Pantry mixes with everyone who needs a gluten-free and wheat-free diet. Right now, there is no known cure for celiac disease, but it can be controlled by a lifelong adherence to a strict gluten-free diet. The Gluten-Free Pantry is here to help provide safe, delicious foods for that diet. After all - there's no need to feel deprived just because you can't eat wheat or gluten!

Preparation Instructions

Double Chocolate Brownies: Entire bag Glutino Gluten Free Pantry Double Chocolate Brownie mix, 2 eggs or 4 egg whites, 1/3 cup + 1 tbsp Earth Balance spread (or melted butter) (You may adapt the recipe to suit your needs by using an equal amount of a substitute ingredient. Do not use commercial egg replacer), 1/3 cup coarsely chopped nuts (optional). Preheat oven to 350 degrees F. Spray 7 x 11 or 8 x 8 inch pan with vegetable oil. In a large bowl, beat eggs for 2 - 3 minutes. Gradually add dry mix. Beat to moisten. Add butter and stir until combined. Fold in nuts, lightly mix. Pour in prepared pan and bake 25 - 27 minutes. Cool completely. For best results, freeze 1 hour before cutting. Makes 12 brownies. May be frozen. For low-fat preparation: Combine mix, 1 cup gluten free low-fat plain or coffee flavored Greek yogurt and 1 tbsp gluten free vanilla. Mix until thoroughly moistened. Beat 2 egg whites until stiff and fold into mixture. Fold in 1/3 cup chopped nuts (optional). Bake 35 minutes in 350 degrees F oven.
