It has a hard, green-black skin with wide ribs, and a fibrous flesh. They taste mildly sweet, similar to a combination of hazelnuts and black pepper. When cooked, they have a creamy consistency. Organic Green Acorn Squash are grown without the use of synthetic fertilizers, pesticides, or preservatives. For variety, hollow out the squash and stuff with bread stuffing or a rice and meat mixture. Choose squash that have a hard, deep colored rind, free of blemishes or moldy spots. Store Acorn Squash in a cool, dark, well ventilated area for up to three weeks.
