  • Grill: Heat charcoal for 30 minutes (until ash covered) or gas grill for 10 minutes with lid closed. Set grill to medium heat (375°F is ideal). Season pork to your liking and grill at 325°F for 30 - 45 minutes. For medium-rare or medium doneness, remove at internal temperature of 140°F or 150°F. Let pork rest for 10 minutes before cutting/serving. Other Option: Sear and braise pork at 350°F for 2 - 3 hours.
