Heat charcoal for 30 minutes or gas grill for 10 minutes with lid closed. Season as desired. Grill 4" above medium heat. Hold palm just above grate. If heat causes you to pull away in 4 seconds, heat is ideal (375 degrees F). Cook 22-24 minutes for Medium-Rare. Remove when 145 degrees internal temperature. Turn every 2 minutes.
