So relax this weekend, stay home for breakfast, and fill your kitchen with the aroma of our fresh baked Choice Batter Lemon Poppyseed muffins!
Only 3 Ingredients Needed: Box of baking mix; 1 cup water; 2 tbsp oil. 1. Preheat oven to 400 degrees F. Lightly grease the bottom of muffin cups (or use paper muffin cups). 2. Stir 2 tablespoons of vegetable oil into 1 cup of water, and add to muffin mix in a medium bowl. Mix thoroughly into a thick batter. - For regular-sized muffins, divide the batter evenly into 12 cups. - For larger-sized muffins (as pictured on front), divide evenly into outer 8 muffin cups, and fill unused cups - 1/3 full with water. 3. Bake 16 minutes or until done. Cool for 1 minute and remove from the cups. Baking Tips: Top muffins with sugar crystals for a gourmet touch. Try using a trigger ice cream scooper to place batter into muffin cups. If using a jumbo 6-muffin pan, bake additional 3-5 minutes or until done.
