Carpe Diem is the product of a classic Burgundian winemaking style using Pinot Noir clones from the Pommard and Dijon regions. Firepeak Vineyard's unique location at the foot of an extinct volcanic peak has a soil composition that is a mixture of marine sediment, clay and volcanic deposits. The hard volcanic sediment stresses the vines forcing deeper roots for more unique varietal characteristics. Small open-top fermentation tanks are used with each lot, which is kept separately until the final blend. This elegant wine is truly a classic and shows the delicate nuances of fruit from the Firepeak vineyard from the Edna Valley. We recommend drinking the wine at a temperature around 60° F to experience all the fruity nuances of a rich Pinot Noir. This wine is recommended for pairing with pheasant, elk, roasted duck, grilled seafood or French cheeses. California.
