You don't have to like sweet potatoes to love this mix's fabulous flavor and aroma unmatched in today's dry mix market. Only water needs to be added assuring ease of preparation. A good source of Vitamin A, Beta Carotene, and Iron while low in fat and having no cholesterol, this product is not only a tasty but healthy alternative to the ordinary pancake.
1/2 cup pancake mix, 1/3 cup water. 1. Preheat griddle to 400 degrees F. 2. Blend together pancake mix and water using a wire whisk. Mix just until all dry ingredients are wet. Do not overmix. 3. Pour 1/4 cup (2 oz.) batter on griddle for each 4 inch pancake. 4. Bake on hot griddle for 2 minutes on first side. Turn and bake on second side for 2 minutes. Makes 2 pancakes.
