The fluffiest, tastiest pancakes imaginable. How it All Began: It all started with an idea: crack an egg over a griddle and out comes a pancake! Try as he might, our founder Matt was unable to find a hen that would lay such an egg. But when Matt's search brought him to Colorado, he befriended fellow pancake enthusiast Naomi. Putting heads and hunger together, they created the next best thing to a miracle hen: Birch Benders Micro-Pancakery. Lizzi (aka Dr. Pancake) jumped aboard and forged the path to making Birch Benders the world's first natural and organic, just-add-water pancake mix. Together, Matt, Naomi, and Lizzi form the Birch Benders Crew. We are Birch Benders and we love pancakes. We hope you enjoy our creation. What is birch bending? Birch bending, like pancake making, is a great American tradition. Birches are incredibly supple trees and will bend, rather than break, when you climb them. As a boy in Maine, Matt spent his summers bending birches, and he highly recommends that you give it a try! After all, as Robert Frost said in his poem Birches: One could do worse than be a swinger of birches. No GMOs. No synthetic pesticides or fertilizers. No artificial colors, flavors, or preservatives. Now let's make some pancakes. All you need is water! Preheat: Preheat skillet or griddle over medium-high heat (we suggest using cast iron), and lightly grease. Skillet is ready when drops of water, sprinkled on surface, sizzle or dance! Blend: Blend pancake mix and water in a bowl. Do not overmix - batter should be slightly lumpy. For thinner pancakes, add more water. For thicker pancakes, add more mix. Pour: Pour batter onto heated, greased skillet. Flip pancakes when they start to bubble and edges begin to dry (For fluffiest and most delicious results, do not flip pancakes more than once). Cook until golden brown on both sides and enjoy! How many pancakes? 5-6 4 Inch Pancakes: 3/4 cup mix; 2/3 cup water. 10-12 4 Inch Pancakes: 1-1/2 cups mix; 1-1/3 cups water. 17-19 4 Inch Pancakes: 2-1/4 cups mix; 2 cups water. Prefer waffles? To make six-to-eight 4 inch waffles, blend: 1 cup mix, 1 cup water, and 1-1/3 tbsp oil. Pour batter onto lightly greased, preheated waffle iron and cook until steaming stops and waffles are golden brown.
