After the birth of our daughter Amy in 1987 we found there was little time to prepare the wholesome nutritious food we normally ate. Realizing there were others like ourselves, we set up Amy's Kitchen to produce delicious, nourishing frozen meals for health conscious people too busy to cook. We use only the finest natural and organic ingredients and prepare them with the same careful attention in our kitchen as you would in your own home. No meat, fish, poultry or eggs are ever used in any Amy's products. Our friend Eric, who comes from Texas, brought us his recipe for this hearty southwestern chili, and Susan, the person who answers your letters, contributed her treasured recipe for the cornbread in Amy's thoroughly satisfying Whole Meal of chili, rice and cornbread. The chili is made with organic beans and vegetables and just enough spice to warm you - the rice is organic, and the moist, tender cornbread is made from organic corn meal and wheat flour. This tastes so great it's hard to believe that the entire 10-1/2 oz meal contains only 6 gms. of fat. So eat and enjoy! Healthy Eating For Busy People: Natural - Most of the ingredients are organically grown and no chemical preservatives or additives are used. If you cant pronounce it, you won't find it on an Amy's label. Delicious - with that homemade taste. Meatless - no meat, fish, poultry or eggs. Convenient - just take the dish out of the freezer, heat in the oven or microwave and enjoy a complete meal in minutes. Certified organic by QAI.
Keep frozen. Conventional Oven: Preheat oven to 400 degrees F. Remove overwrap and cover whole meal with aluminum foil. Place tray on cookie sheet and bake for 16 minutes. Remove cornbread from the oven and wrap in foil to keep warm. Place tray on cookie sheet and bake uncovered at 400 degrees F for another 18-20 minutes or until heated throughout. If desired, keep cornbread in foil and warm in oven for final 3 minutes of bake. Microwave Oven: Make a slit in overwrap above the cornbread only. Microwave meal on High for 1 minute 20 seconds. Widen slit above cornbread, remove cornbread from oven and set aside. Microwave the remaining meal on High for 3 minutes and 30 seconds. Remove the overwrap, replace the cornbread and serve. Ovens vary so please use these instructions as a guide to the best preparation for your oven. Do not use a toaster oven.
