Mexican Pizza - Using English muffins as the crust, spread refried beans, then layer chicken strips seasoned with taco flavoring, cheese and salsa. Beans are high in fiber and low in fat while salsa is high in vitamins A, C and lycopene, an important antioxidant.
Greek pizza - Use pita bread as the crust, add light sour cream, deli-sliced turkey breast strips, diced cucumber, diced tomato and feta cheese. Feta cheese is low in fat and high in calcium.
