Floral Design with H-E-B's Scott Peck

Renowned San Antonio floral designer Scott Peck, AIFD TMF, H-E-B's Floral Product Development Manager, is quickly guiding H-E-B Floral into the fashion forefront.

Scott Peck, AIFD TMFspacerH-E-B: Scott, you're well known in floral circles these days—designing for major events, conducting seminars internationally—but how did you actually get started in the industry?

SP: I was working with my dad in his nursery business. So plants were already a big part of my life. Anyway, he had this floral designer come in to do some staff training, and I discovered that I really had a knack for it. I thought, "Hey, I'm pretty good at this stuff. Maybe there's something here." Before that, I was thinking of going into architecture. So the interest in structure and design was already there. And you find that all design is really based on the same principles. It just depends on the medium.

H-E-B: And after that, what happened?

SP: Well, a lot. I did loads of design work. Managed a few stores. Became incorporated and got my charter. Did a great deal of event work from my warehouse. Then expanded into silk florals. I also traveled instructing floral designers with different floral businesses. So, I ended up getting involved in a lot of different areas of the industry. Then H-E-B called. And here I am.

H-E-B: What's the single, most important thing you've learned over the years about floral design?

SP: Emotion. You're not only selling flowers, you're selling an emotion. You're generating an instant, automatic response in people—joy, love, sympathy, appreciation. It's what floral is all about.

H-E-B: How about those of us who are amateur florists out there? Could we maybe get a few floral tips for our readers? Like, where do we even begin when trying to design something?

SP: Well, you have to consider what the bouquet is for. Is it a gift item? Or is it for your home?

If the bouquet is for your own home, try to buy flowers "tight" (like roses or tulips) with the blossoms still closed so they last longer. Don't worry, they'll open quickly. If the bouquet is a gift, buy the flowers already open for greater beauty at presentation.

Also, is the arrangement for an entry in the home? Then think tall, dramatic. If it's for a coffee table, then make it a lower arrangement. Is it a get-well bouquet? Then think bright and cheerful. The main thing is to consider where it's going and what would complement the room, person or situation best.

H-E-B: What flowers are hot right now?

SP: Fashion always drives the favorites. Right now, orchids, gerbera daisies and tulips are really big. And, of course, you can't go wrong with roses. We're also seeing a leading-edge trend coming out of Europe that clusters brightly colored daisies—teal, fuchsia, chartreuse, neon orange.

H-E-B: What kind of bouquet look is in?

SP: Casual elegance. Something simple, sleek. Something people can live with. That's why flowers like orchids and gerbera daisies are such a big hit.

H-E-B: Could you give us a quick example. An arrangement perhaps our readers could put together in their own homes.

SP: Sure. Think simple. Think elegant. Buy a bunch of flowers of the same kind and color. Like gerbera daises or tulips. But use just one kind of flower in one, maybe two, colors. Arrange the flowers in a simple glass vase and pour in plenty of water. Just be sure to follow the instructions on the flower food packet that came with the flowers to get the most life out of them. And remember to check back everyday to make sure the vase has enough water in it. That's a common oversight.
