Grapes are sourced from Bertani's estate vineyards in the Soave district. The soil is basaltic, of volcanic origin. GRAPE VARIETIES: 100% Pinot Grigio PRODUCTION TECHNIQUES: Grapes are harvested at the beginning of September and traditional white wine fermentation takes place in stainless steel tanks at temperatures of 57-60 degrees F, with 50% of the juice undergoing malolactic fermentation. The wine then remains in tank on the lees for approximately five months. Following bottling, the wine rests three months before release.
