Growing up in Corpus Christi, Elizabeth's passion for dancing and performing developed at a very early age. Her drive to stay physically fit was mostly due in part to Elizabeth's greatest role model, her mother. She grew up watching her mom exercise daily, from aerobics to running in marathons. She accredits her mom for instilling the healthy behaviors that flourish in her to this very day.
Elizabeth lived with her family and her grandmother for much of her young life. Her grandmother's struggle with Type II Diabetes left Elizabeth with so many unanswered questions and left her feeling helpless and lost when her grandmother finally succumbed to the disease in 1996. This sparked an interest and ultimately a passion for education and disease prevention.
Elizabeth earned her Bachelors and Masters of Science in Human Science with an emphasis in Nutrition from Texas A&M University Kingsville, where she also completed her Dietetic Internship.
Elizabeth's early career started in clinical dietetics at Christus Spohn Hospital Shoreline where she worked as a clinical dietitian in various units from Cardiovascular ICU, Skilled Nursing, Urology, Orthopedics, Oncology, and Telemetry units. She then moved to an outpatient dialysis center where she would work for eight years for Fresenius/Davita. Additionally, she worked in an outpatient counseling setting for Coastal Bend Women's Center where she counseled women with gestational diabetes, type II diabetes, hypertension, and weight loss concerns. Prior to joining the Health and Wellness team with HEB, she was working at Naval Health Clinic Corpus Christi/Kingsville. During her time there she counseled patients on type II diabetes management, hypertension, weight loss, failure to thrive, food allergies, and celiac disease.
